A New Name With Deep Local Roots
The name Belle & Grey wasn't chosen arbitrarily.
Owner Steve Bohl named the concept after his grandchildren, Greyson and Anabelle, while also referencing two Lake Minnetonka landmarks:
- The historic Belle of Minnetonka steamship
- Gray's Bay
It's the kind of brand story that ties a business to place, which tends to resonate in communities as deeply rooted as Wayzata.
The dining room itself was redesigned with that same spirit in mind:
- Dark green walls
- Layered and varied seating
- A warm, moody atmosphere
All were chosen with the goal of creating a space that feels established rather than newly built.
A new private room called The Library sits just off the main dining area and offers a dedicated whiskey and wine experience with its own menu.
The Chef and the Menu
Belle & Grey's kitchen is now led by chef de cuisine Tsu-Hung Liu, a graduate of the Culinary Institute of America.
He has held roles at notable restaurants in:
- San Francisco
- Philadelphia
Most recently, he served as chef de cuisine at Eloise, an upscale Wayzata restaurant that opened in 2024.
His menu leans into elevated comfort food, with dinner options including:
- Steak au poivre
- Pan roasted walleye
- Lobster pot pie
- A signature burger made from locally sourced wagyu beef
Breakfast, lunch, and weekend brunch are also offered, with standout items such as:
- Tres leches French toast
- King salmon risotto
A new craft cocktail, wine, and draft beer program rounds out the full-service experience.
