From Construction Job to Custom Smoker

Owner T. J. Nolen didn’t plan on running a barbecue business. A decade ago, he walked away from his construction job looking for something more meaningful. His father had always talked about owning food trucks and feeding people, so the two made a decision that changed everything. They traveled to Missouri to pick up a custom-built smoker, hauled it back on a car trailer, and set up wherever they could find customers.

Those early days were simple. A smoker strapped to a trailer. Parking lots outside barbershops. Word of mouth. One plate at a time.

Growing a Following One Parking Lot at a Time

The model worked. Customers loved the food, and Rollin Nolen’s developed a loyal following around the Twin Cities. T. J. and his brother eventually brought the trailer to the Minnesota State Fair, introducing the brand to a much bigger audience. Over time it evolved into a full food truck operation.

Even as the business grew, the family-first approach never changed. T. J.’s siblings pitched in wherever needed. His sister Jessica covered everything from cashier work to smoking meats. His father kept operating the original trailer.

A Permanent Home at Midtown Global Market

In 2024, Nolen was approved for a space inside Midtown Global Market. Six months later, the doors officially opened. The new location brings the same menu locals already love, but with a more consistent home base. Ribs. Brisket. Chicken. Real smoke. Real family cooking.

The market location also gives Rollin Nolen’s better access to foot traffic, tourists, and Minneapolis residents looking for quick lunch or dinner options. They’re open seven days a week, which makes them easy to add to your rotation.

Looking Ahead: Giving Back Through Culinary Education

Nolen has bigger plans than just serving food. He wants to teach local youth how to smoke meat and is already considering ways to offer culinary classes. His goal is to help young people build skills, confidence, and maybe even the next great food business.
