A New Yorker Bagel Brand Picks Minneapolis First
A viral New York bagel chain is making the Twin Cities its Midwest entry point.
PopUp Bagels, founded in Westport Connecticut in 2021, plans to open its first Minnesota location at 107 Third Avenue North in Minneapolis, between Solidcore and Bellecour in the Saxon Building.
Franchisee Dan D'Aquisto told the North Loop Neighborhood Association's Planning and Zoning Committee the shop could open by late September or early October.
The space is roughly 1,700 square feet.
10 Locations Planned Across the Metro
D'Aquisto's group, Hustle and Dough, is the exclusive Midwest development partner for PopUp Bagels.
The plan is to open up to 10 locations across the Twin Cities, according to the North Loop Neighborhood Association.
A second location already appears to be in motion.
Hustle and Dough Highland Park LLC is registered with the Minnesota Secretary of State, suggesting a St. Paul outpost in the Highland Park neighborhood is in the works.
The Grip, Rip, and Dip Difference
PopUp Bagels operates differently than a traditional bagel shop.
They do not slice their bagels, toast them, or make sandwiches.
Customers tear off chunks and dip them into cream cheese or butter.
Varieties include plain, everything, poppy seed, salt, and sesame.
The brand currently has 43 locations across 15 states and Washington D.C.
Twin Cities chef Gavin Kaysen of Bellecour, Demi, and Spoon and Stable is reportedly a big fan from his New York visits.
What This Means for the North Loop and Beyond
The North Loop continues to attract national food brands with strong followings.
A flagship location for an out of state concept signals continued confidence in the neighborhood's retail momentum.
A Highland Park outpost would extend that energy across the river into one of St. Paul's most established residential corridors
