Moe’s Southwest Grill Plans New Woodbury Location

The east metro dining scene is heating up again. Moe’s Southwest Grill, a popular fast-casual restaurant chain, is officially planning to open a new location in Woodbury, Minnesota.

Details on the Woodbury Location

The restaurant is slated for 6671 Valley Creek Road, in a building it will share with Dunkin’. The space is expected to measure 2,600 square feet, seat 42 people, and employ a staff of five. Pending approval from the Woodbury City Council in October, construction will move quickly — meaning the community could be enjoying burritos and queso in just a few short months.

Moe’s Southwest Grill first entered Minnesota in 2019 with a location at Minneapolis-St. Paul International Airport. However, this new Woodbury site marks its first real push into the Twin Cities east metro.

What Sets Moe’s Apart?

Moe’s has made a name for itself by offering a customizable menu that goes beyond the basics. Guests can choose from burritos, bowls, tacos, and salads with a wide variety of toppings. Every meal comes with unlimited chips and salsa, and their queso — playfully branded “liquid white gold” — is a menu highlight.

In a region where Chipotle Mexican Grill has over 70 locations, Moe’s aims to bring a different flavor profile and dining experience. The brand is well-positioned to appeal to families, commuters, and busy professionals looking for a fresh fast-casual option.

Expansion Beyond Woodbury

The franchisee behind this expansion, Satnam Dhillon, has agreements to open additional Moe’s locations in Cottage Grove and Inver Grove Heights. Finding the right real estate has been a challenge, but Dhillon is optimistic that more prime spots will open up soon.

Dhillon, whose background is in software IT consulting for major Minnesota companies like 3M and Medtronic, sees this as an opportunity to bring a new food experience to local communities.

What It Means for Woodbury Residents

For Woodbury, Moe’s Southwest Grill adds to the city’s already vibrant restaurant lineup. The Valley Creek Road location offers easy access to Interstate 694, making it convenient for both locals and commuters.

This move also signals continued growth in Woodbury, one of Minnesota’s fastest-expanding suburbs. National restaurant chains continue to see opportunity in the area, thanks to its population growth and strong mix of retail, residential, and office development.

Final Thoughts

Moe’s Southwest Grill is more than just another burrito shop. With its bold flavors, unlimited chips and salsa, and signature queso, it’s positioned to become a go-to dining destination in Woodbury and beyond.

If you’re considering a move to Woodbury or the east metro, it’s not just about homes — it’s also about lifestyle. Great food, new businesses, and community growth are all part of what makes this area so desirable.
