Listo! Fresh Mexican Grill Expands to Woodbury
Woodbury is getting another new restaurant, and this one is a proven local concept.
Listo! Fresh Mexican Grill is opening its second location at 1960 Donegal Drive in Woodbury. The restaurant will occupy the former Ramen Station space near Valley Creek Road and Radio Drive.
The original Listo! opened in April 2018 near The Quarry in Northeast Minneapolis.
A Local Brand Expands East
Owners Manuel Pizano and Suzanne Tresnak are not outside operators testing a new market. They live in Woodbury and signed a long-term lease for this space. That signals commitment.
The new location will be approximately 1,400 square feet and is expected to open by the end of March 2026.
Pizano plans to start with a smaller menu compared to the Minneapolis location. He wants to learn what Woodbury customers prefer before expanding the offerings.
He also owns two Erbert & Gerbert’s franchises, giving him experience with how menu performance can shift depending on the neighborhood.

Woodbury continues to attract restaurant operators who believe in the area’s long-term growth. With steady residential development and strong household incomes, the East Metro has become a reliable expansion target for local brands.
