Bellecour Opens in Edina: Gavin Kaysen Expands His Minnesota Footprint
Chef Gavin Kaysen has added another notable entry to Minnesota’s food scene with the opening of Bellecour in Edina. This new bakery and cafe sits at 3934 Market Street, taking over the former Cooks of Crocus Hill shop and giving the space a complete redesign. For Edina residents and Twin Cities food lovers, this is a welcome addition to an already strong local dining lineup.
A Fresh Start With a Familiar Name
Bellecour first gained attention when it opened as a full-service bistro in Wayzata in 2017. After its 2020 closure, the brand continued as a pop-up partnership at Cooks of Crocus Hill in Minneapolis. Earlier this year, Bellecour officially separated from Cooks and began charting its own path again. The Edina location marks the first opening under this next phase.
The new space offers counter-service dining anchored by a curated selection of pastries, viennoiserie, coffees, and teas. Later in the day, the menu transitions to soups, salads, and beverages like wine and champagne by the glass. The setup allows for quick morning stops and relaxed mid-day visits, giving residents more flexibility in how they enjoy the space.
Designed for Comfort and Community
Bellecour’s design blends French influences with a comfortable Minnesota feel. Guests will notice an antique 60-inch French dining table paired with smaller cafe tables. Designed by Shea with input from Linda Kaysen, the space feels warm, casual, and approachable. It fits seamlessly into the surrounding Southdale/Market Street district.
For Edina, which continues to grow with new restaurants, retail, and residential options, Bellecour adds a culinary destination that encourages repeat visits.
More Growth Coming Soon
Bellecour’s expansion doesn’t stop in Edina. A second new Minneapolis location is expected to open next month at 107 Third Avenue North. That space will operate as a counter-service bakery during the day and transition into a full-service neighborhood bistro in the evenings.
Kaysen’s Soigné Hospitality Group also plans to open The Merchant Room at the new Naples Beach Club, A Four Seasons Resort, in December. It will be his first Florida location and another step in his growing national presence.
